Was googling cornmeal and tamale pie recipes as unsure whether polenta, fine or coarse cornmeal was the best to buy to try. Lots of top crust tamale pie recipes out there … still not sure what to buy. Maybe American readers will know ?
It’s strange isn’t it - all the recipes I could see online has the cornbread on top rather than underneath but this was delicious! I used a coarse cornmeal and I really liked the texture with the corn kernels mixed through 🌽
